Mash avocados until smooth and drizzle with lime to prevent browning. Stir in sour cream, parsley, salt & pepper, garlic powder. Mix to combine, and set aside.
Cut chicken breasts in two lengthwise. Place them on a wooden cutting board cover with plastic wrap and pound on both sides until even.
Prepare three bowls - flour, eggs, breadcrumbs. Dip the chicken first in flour.
Then egg. (Make sure to fully coat at each stage)
And lastly, panko breadcrumbs. Set aside.
In a nonstick skillet cook bacon until crispy.
In the same skillet, cook chicken on medium-high for 3-4 minutes on both sides or until golden brown, crispy, and cooked through.
Assemble the wraps. Spread the avocado crema in the center of tortilla, add lettuce, tomatoes, bacon, mozzarella.
And finish with chicken breast and cheddar slices.
Fold in the sides, almost until the middle leaving a couple of inches free with the filling peeking through. Holding the sides folded, bring up the bottom flap
and keep rolling until the filling is tightly secured and nothing coming out. Heat the wraps on a nonstick skillet until golden brown.
Remove from pan and cut in half. Drizzle the wraps with a bit of lime juice, sour cream and sprinkle with fresh herbs!
